Leslie's Any-Fruit Fruit Salad

---
This is an awesome dish to serve as a snack,
a side dish, or even as a dessert.
The awesome thing about it is-
you can use ANY fruit you want.
-
This salad has a secret ingredient,
and it works wonders with any combination of any
type(s) of fruit.
-
So you can use your very favorite fruits,
or you can go for the colors you want,
or for what's in season or on sale,
or just whatever you have in your fruit basket.

DIRECTIONS:
Simply cut and mix up any kind of fruits you want.
My faves include melons, berries, bananas, etc.
If you want it to look nice, be careful not to smash
the berries as you mix.
The secret ingredient is: Pina colada mix.
Our favorite is the frozen Bacardi pina colada mix,
located in the frozen juice section of the store.
But if you can't find that one, just use a bottled
pina colada mix from the soda section.
Add enough to give a nice, sweet, pina colada flavor.
YUM!

White chocolate popcorn

 
SO EASY AND DELICIOUS!!!!!!
 
3 bags of act two butter microwave popcorn popped.
Melt one package of vanilla almond bark. Try 2 min. then stir and keep cooking till its all melted. pour over popped corn. stir and put out on waxed paper. Can top with sprinkles.

Chili's Queso dip

Chili's Skillet Queso
This really IS a delicious copycat of Chili's famous queso.
My only problem was that it was a teensy bit spicy for me and
my littles... so the next time I make it, I will cut the cayenne and
chili powder in half (I marked these with asterisks as a reminder) -
-
INGREDIENTS:
-
 16-ounce box Velveeta Cheese
-
1 C. milk
-
2 teaspoons paprika
-
½ tsp. ground cayenne pepper **
-
15-ounce can Hormel Chili (No Beans)
-
4 tsp. chili powder **
-
1 tablespoon lime juice
-
1/2 tsp. ground cumin

DIRECTIONS:
-
Cut Velveeta into cubes.
-
Over medium-low heat, warm all ingredients in saucepan til cheese is melted.
-
That's it!!  It's DELISH!

Easy Popcorn without a popper or store bought microwave popcorn.


Easy directions for your own microwave popcorn.
Place 1/4 cup unpopped kernels in a brown-paper lunch bag. Fold the top over tightly a few times; microwave on high for about 2 minutes, or until the popping slows (the timing depends on your microwave). can add oil

or:
Stove-top Popcorn Recipe
-Large pot with tight fitting lid
-oven mitts
-1/2 cup popcorn
-3 tablespoons cooking oil
Pour oil and 1-2 kernels of popcorn into pot with lid, and heat on high. When the kernels pop, pour remaining popcorn into pot and replace lid. When popcorn begins popping  shake pot. Shake pot a few times, return it to heat for 30 seconds, and shake pot again. As soon as popcorn stops popping, remove pot from heat.

Then add your favorite toppings.
I love Carmel, marshmallows, white chocolate, or nuts
use your favorite recipe♥

I love popcorn with movies or football games!

Zucchini Crisp....for dessert, for real.

This is so good, you won't believe it's made with zucchini!!
This is all that was left last night in my "I Love Joe" pan.

You will need:
8-10 cups zucchini (peeled, seeded, sliced, and cut into quarters...I used one big huge zucchini to make one pan.)
2/3 cup lemon juice
1 c. sugar
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla

On the stove, cook zucchini in lemon juice until it is tender. Add the sugar, nutmeg, cinnamon, and vanilla. Simmer.

While that is cooking:
4 c. flour
2 c. sugar
1/2 tsp. salt
1 1/2 cup butter, softened

To make the crumb mixture, mix flour, sugar, and salt then cut in the butter. Put half of the crumb mixture in the bottom of a greased 9x13 pan and pat it down. Bake the crust at 375 degrees for about 10 minutes.

Add half of the remaining crumb mixture to the zucchini mixture to thicken it up. Add 1 tsp. of cinnamon to the rest of the crumb mixture and set aside. When the crust is done, pour the zucchini mixture on the crust and top it with the rest of the crumb mixture. Cook uncovered for about 40 minutes, or until bubbly.

Good served warm, cold, with ice cream or without. Trust me, it's good :)

Liz's Indoor Smores



Liz made these for the family on Memorial day. Yummmmmmmmmm!

1 box golden grahams (cereal)
1 pkg. chocolate chips
3 Tbls. butter
3/4 c. Karo syrup
1 tsp. vanilla
3 C. Marshmallow's

*
Pour grahams in bowl. set aside.
On top of stove melt in pan butter, choc. chips and Karo syrup. Bring to a boil. Remove from stove add vanilla.
pour over grahams add 1 c. marshmallow's at a time and stir. put in greased Pyrex dish
can set up for 1 hour.

Orange Marbeled Fudge


This is seriously the best stuff ever!!
Here's the recipe:
~
3/4 cup butter
3 cups sugar
3/4 cup heavy whipping cream
1 package vanilla or white chips
1 Jar marshmallow creme
3 teaspoons orange extract
12 drops yellow food coloring
5 drops red food coloring

Grease a 13 x 9 inch pan. In a heavy saucepan, combine sugar, cream and butter . Cook and stir over low heat until sugar is dissolved. Bring to a boil; cook and stir for 4 minutes. Remove from heat; stir in chips and marshmallow creme until smooth. Remove 1 cup and set aside.
Add orange extract and food colorings to the remaining mixture; stir until blended. Pour into prepared pan. Drop the reserved mixture by tablespoonfuls over top; cut through mixture with a knife to swirl. Cover and refrigerate until set - then you can leave it on the counter.
This must be made many, many times throughout the Fall or whenever..

[the infamous] Sombrero Dip

I don't know where my mom got this recipe,
but we've been using for years!
It's awesome for football games, get-togethers
or a meal all in itself!
-
INGREDIENTS:
-
2 lbs. hamburger
-
1 c. onion
-
2 c. 'hot catsup'
(this used to be in all grocery stores but lately has
become hard to find!  if you can't find it, use regular ketchup
and add more chili powder or spice if you need to)
-
6t. chili powder
-
2 t. salt
-
4 8-oz. cans kidney beans
-
2 c. cheese (cheddar or a mexican combo if you like)
-
Tortilla chips for dipping!

DIRECTIONS:
-
1. On the stove, brown the hamburger.
-
2. While the beef is cooking, pour the kidney beans into your
blender or food processor to blend down to somewhat smooth.
-
3. Once the beef is cooked, combine all ingredients together,
mix and let heat through over medium to medium-high heat.
-
Serve as a dip with chips!

brand new [low-sugar] creation

Super-Easy Fruit Salad

I kinda 'created' this by mixing the ideas of a few other
recipes with my own special specialness ;)
---
INGREDIENTS:
(keep in mind you can throw in whatever you want!!
this is what i used:)
2 cans (abt. 20 oz.) canned fruit chunks in light syrup
1 can mandarin oranges
1 small box sugar free vanilla pudding mix
2 c. milk
1-2 c. cool whip
(pineapple chunks, cherries, apples, strawberries, bananas, etc.
can all be tossed in for good measure...)

DIRECTIONS:
1. Blend the pudding mix and milk til the pudding is almost set
2. Add about a cup of cool whip (the more you add, the fluffier and
sweeter the salad will be)
3. Blend another minute or so til the texture is how you want it
4. Drain the juice off the canned fruit; cut up the fresh fruit if applicable
5. Toss in the fruit and mix up!

You can skip the "low-sugar" part of this recipe by using heavier-
syrup-ed fruit, sugar-full pudding mix, etc., but it's just as yummy
either way ;)

Sugar Cookies (that will make your dreams come true)

Um, yeah, they're that good.

And easy too.

Here's the recipe, but I doubled it and will probably throw some in the freezer. If they last that long.

1 1/4 c. sugar
1 c. butter
3 egg yolks (just the yolks!)
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cream of tartar

Cream butter and sugar, then add egg yolks and vanilla. Add baking soda, cream of tartar, and flour - a little at a time. Mix thouroughly. Make round balls (don't flatten) and bake at 350 for 10-11 minutes.

Add a little cream cheese frosting and call it a night. YUM!!

Banana Blueberry Muffins


Yummy Banana blueberry Muffins


2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1/3 cup butter, room temperature
2 eggs
1 cup mashed ripe bananas (or two medium-sized bananas)
1 teaspoon vanilla
1 cup fresh blueberries (rinse and pat dry)
Preheat oven to 350 degrees and line tray with muffin cup papers.
Sift flour, baking powder, salt and sugar together with a wire whisk.
Add butter, eggs, bananas and vanilla.
Mix on low until just combined.
Fold in blueberries. Reserve some to place on the tops.
Bake for about 20 minutes or until toothpick inserted comes out clean.
Serve while still warm with butter.
Makes 12-15 muffins.

Summer Corn Salad

It's super-simple, but soooooo delish.
-
INGREDIENTS:
4 fresh ears of corn on the cob (I've subbed 1-2 cans of corn)
3-5 medium tomatoes, diced
1 cup bleu cheese crumbles (Feta may used instead)
1 handful fresh chives, chopped
Salt & Pepper
-
DIRECTIONS:
-Cut kernels directly off cob and place in medium bowl
(unless you're using canned like me- then just dump in bowl!)
-Add tomatoes, cheese, herbs, and salt and pepper to taste.
-Eat with a giant serving spoon ;)
-
*Tiffany's Hint: You can mix this up a zillion ways-
you can use different cheeses and different herbs...
whatever will taste good to ya!  It's easy, fast and AWESOME!!
