Pumpkin soup

 
recipe:
2 lg. onions
1 in. fresh ginger or 1 TB. ground ginger
4 Tb ls. veg. oil
7 c. water
15 oz. can pumpkin
1 med. potato
2 med. sweet potatoes
1/2 c. applesauce
3 TB LS. maple syrup
1 tsp. cinnamon
1 Tbs. vegetable soup mix (gluten free)
1 Tb. salt
1/4 tsp. pepper
1/2 c. half and half
pine nuts to garnish
saute cut onions in 4 Tb ls. vegetable oil
till golden. Stir in ginger
Add water, pumpkin, potatoes, sweet potatoes chopped. Bring to boil, and then cover and simmer for 35 minutes.
Use hand blender to puree veggies till smooth.
Add soup mix, salt, cinnamon, pepper, syrup and simmer for 10 min. Then add half and half.

Carrot Soup

One of my friends brought this carrot soup to Mark when he first got sick
years ago!!
It has remained a favorite.
You cook down all veggies
like pictures below....

 Then blend all together
 and it comes out like this, all smooth and creamy.

Recipe:

Saute one med. onion in 2 TB LS. butter
add 2 TB. powdered ginger and saute another minute.
use 10 cups of water and 5 T. powdered chicken granules or 10 c. Chicken broth.
4 lbs. carrots washed and cut into pieces. no need to peel.
Salt and Pepper
Bring to boil. Reduce heat and simmer until veggies are soft. about 30-35 min.
Blenderize
add 2 cups. orange juice
(can add celery, and other veggies if desired.)
It's tasty and gluten free!

cheese broccoli soup

This soup recipe is from my friend Heidi. 
She has brought this to my family, and I have made it for my family.
Time to share it with all of you.

Broccoli Cheese soup
4 c. cubed potatoes
2 c. sliced carrots
1 onion chopped
2 c. celery
3 c. cut up broccoli
Boil all veggies except broccoli in 2 c. water (10 min)
add broccoli and boil 10 more minutes.
DO NOT drain-add sauce

SAUCE:
 (in a saucepan cook till smooth)
1/2 c. margarine
2 c. milk
1.t. dry mustard
3 TBLS. flour
1/4 tsp. pepper
1 POUND VELVEETA CHEESE (you heard me)
3 chicken bouillon cubes

lots of good vegetables!!
Time to get over the Velveeta.
 I promise you this is goooooD!!!

Corn chowder that Sue made for g-mas party 2011

Corn Chowder

Cook 1/2 -1 lb bacon until crispy
1 c. onion
3 c. potatoes chopped
1 c. celery chopped

cover with water and add 1 can corn drained.
Simmer until tender. Do not drain water, set aside.

In another pan:
melt 3/4 c. butter
1 1/2 t. salt
1 1/2 t. pepper
2 tsp. sugar
3/4 c. flour
Make a paste. Then add 1 pint half and half and 2 c. milk. Stir until thickened.
Pour into potato mixture. It will thicken. Add the crumbled bacon to the soup. I also love to add a little cheese.

Easy.. easy Potato, corn soup

Yesterday I made this simple soup recipe..

It's a great soup to take to neighbors when short on time,
or feed the fam.

And it's delicious

Potato corn soup
2 cans cream of Potato soup (campbells)


2 c. milk

2 cans corn drained

1/4 c. crumbled bacon

salt and pepper

can add cheese if desired

Veggie Soup



Weight Watchers garden vegetable soup


2/3 c. sliced carrots
1/2 c. diced onion
saute carrots and onion in pam spray till softened
add 3 c. fat free chicken or veggie broth ( I usually add the rest of the can left over)
1 c. chopped green cabbage
1 clove garlic
1 c. chopped celery
1/2 c. frozen green beans
1/4 tsp. salt
italian seasoning to taste

opt: asparagus, red, green or yellow peppers
1/2 c. zuchinni
bring to boil, cover simmer 15 mi.

I have made this soup adding pieces of chicken, adding v-8 juice.
Yesterday I made it with 1/2 lb. ground beef and 1 can black beans.
