Mexican quinoa

1 c. water
1/2 c. quinoa
bring water to boil, simmer until water is gone.
cool.
ADD:
1 15. oz can of black beans
1 15 oz. can or corn drained
1 c. Roasted Tomatoes
1/4 c. purple onion diced
2 TBLS. cilantro
2 jalapenos-diced (or less if you don't like spicey)
juice of 2 limes
1 TBLS. olive oil
Salt to taste.
