Cafe Rio at home

This is actually three recipes for the price of one!! With all these yummy recipes, you can recreate your own Cafe Rio pork salad...perfect for a Sunday when you can just throw it in the crockpot and let it cook all day.

Pork Barbacoa:
4 lb. pork roast
2 cans tomato sauce
2 tsp. garlic
1 cup brown sugar
1 can of coke or dr. pepper
2 tsp. cumin
2 tsp. molasses
salt and pepper to taste
Put pork roast in crock pot, combine all other ingredients and pour over roast. Cook on low for 7-8 hours. Shred pork and YUM!

Lime Rice:
2 Tbsp. butter
1 1/4 cup uncooked rice
2 1/4 cup chicken broth
3/4 tsp. salt
pepper to taste
1 lime, juice and zest
2 tbsp. cilantro
1/2 tsp. cumin
Combine ingredients and cook rice as usual. (I used my rice cooker and just put it all in, minus the butter. I added a little extra lime after it was done cooking.)

Tomatillo dressing:
8 oz. green salsa
1 1/2 tbsp. dry ranch dressing mix
1/4 cup sour cream
1/4 cup mayo
1/2 cup cilantro
1/2 tsp. garlic
1/4 tsp. cayenne
1/4 tsp. salt
2 tsp. lime juice
1/4 tsp. cumin
1/4 cup sugar
Blend all ingredients and let sit in the fridge for a few hours.

To make my salad, I put a tortilla on a skillet and melted some cheese on it. I warmed up a can of black beans, and put those as the first layer. Then the rice. Then some salad. Then the pork. Then a little cheese and sour cream. Add the dressing and your Cafe Rio taste-alike is complete. So good!

is it bad if i make the rice and dressing and just eat those?!?! hahaha-- that rice is my fave! mmmmmmmmmmmm i'll be makin this asap
