gluten free, sugar free peanut butter cookies

Quick Flourless/Sugarless Peanut Butter Cookies 1 cup peanut butter 1 cup Splenda 1 tsp vanilla 1 egg, beaten Cream together peanut butter and splenda, then stir in vanilla and egg. Scoop out in 2" balls and roll in a little splenda, then place on parchment paper lined baking sheet. Press down with the back of a fork to flatten slightly. Bake at 350 F 8-10 minutes or until they start to brown on the edges and are firm to the touch. Cool on baking rack.

Thanks Sue, I can't believe I haven't commented about these yet. I love this recipe, but I've never tried it with Splenda, looks like I'm making cookies today!!
