Bacon Wrapped Pork Medallions

First, let me say, Oh. my. goodness. these were good! I actually found the recipe online, but tweaked it a little to fit my family's taste buds.

Super easy to make, looks super fancy, and tastes super yummy...


1 pkg. bacon

3 Tbsp. garlic powder (NOT garlic salt, it will be too salty)

1 Tbsp. onion powder

3 tsp. herbs de provence (you can substitute italian seasoning here)

1 pkg. family size boneless pork chops


Preheat oven to 400 degrees. Cook bacon in skillet until brown but still flexible, drain on paper towel and remove most of the grease from the pan. Leave a little bit of grease.

Combine garlic powder, onion powder, and herbs in a bowl.

If the chops are small, leave them. I cut mine in half to make them about 3 inches in diameter. Wrap bacon around the edges of the chops and secure with toothpicks. Dip both sides of medallions in the season mix.

Heat up skillet again and brown the chops for about 4 minutes on each side. You can also put them up on their sides to brown up the bacon a little bit more if you like it crispier (I do).

If your pan is oven proof, just pop the whole thing in the oven and bake for about 10-12 minutes until the pork is no longer pink. Don't overcook because pork chops can dry out pretty fast.
Serve to your family and wait for the compliments to start rolling in...
