Ham-Wrapped Chicken

This is my mom's recipe, fo 'sho!
She's been makin' this for years, and we just love it.
Super easy, takes about an hour to bake, feeds an army!

INGREDIENTS:
6-8 (or however many you can fit into a cake pan) boneless chicken breasts
(I've used boneless thighs too)

1 package of deli ham (I think the thicker the better)- you just need
enough to cover each piece of chicken

1 jumbo can (or 2-3 regular size cans) cream of mushroom

1/2-1 16-oz. container of sour cream
-
Salt and Pepper
-
1/2 c. shredded cheddar cheese

[Rice, to serve chicken with]

DIRECTIONS:
1. Preheat oven to 350 or 375; Line a 9x13 cake pan with foil (easy cleanup!)

2. In a bowl, mix cream of mushroom, sour cream, cheese and seasonings.
Spread a thin layer on the bottom of the pan

3. Wrap each piece of chicken with ham (if I have thinner slices, I'll use
2 or 3; thicker I'll use 1); set into cake pan

4. Continue til all the chicken is wrapped and in the pan.

5. Pour/spread the rest of the mushroom mixture over the top of the chicken.

6. You may cover with foil or not; if you don't, the ham will end up a little
crispier- whatever you like, we do it both ways

7. Bake for about an hour, until the chicken is cooked through.

Serve over rice.
Don't forget to spoon some extra sauce from the chicken pan
over your rice- that's the best part!!
