"Yellow Chicken" revised

{I saw Rachael Ray make a recipe called "Yellow Chicken & Rice"
on her TV show.  I loved the idea, but it had a gazillion ingredients
and took too long.  So, I dumbed it down to my level and this is
how I make it now.  PS- my husband loves it!}

INGREDIENTS
8-10 chicken pieces (we prefer drumsticks or thighs)
1 c. rice
2 palmfuls broken spaghetti noodles (break them into thirds or quarters)
3 c. chicken stock (I've subbed water if I don't have stock)
2-3 T. dried onion flakes (or you may use a small fresh onion)
2 cloves garlic, chopped or minced
1 small bag frozen peas
2 T. butter

DIRECTIONS
-In a large fry pan or skillet (use one at least a few inches deep), cook the chicken
on medium-high (closer to medium) heat for a few minutes on each side (line pan with
butter or oil first)
-Season the chicken as you like it, with salt and pepper and other
seasonings, if you wish
-After about 4 minutes cooking on each side, when the chicken is NOT DONE
but golden on the outside, take it out of the pan, place it in a bowl and set aside-
(you may cover with foil or set in the microwave to keep warm)
-Using the pan you took the chicken out of, melt 2 T. butter
-Add the broken spaghetti pieces and the rice
-When the noodles are golden-brown in color, add the onion and
garlic and let cook until those are tender (I use dried onion and
minced garlic, so I don't have to wait at all in this step)
-Add the stock or water, the reserved chicken and the frozen peas
-Bring the liquid to a boil
-Reduce heat to medium and let simmer until the rice is cooked-
(this takes nearly 20 minutes I've found, but you don't have
to stir it or watch it- just let it go til the rice is cooked)
*You may add more or less rice and more or less stock
and cook it a little shorter or longer in order to keep everything
"stickier" or more dry- depending on how you like your rice-

Using the one pan for everything infuses chicken flavor into the
entire dish.  Plus, I LOVE the noodles in with the rice- it's like a
yummy pilaf.  It just works!
