Stuffed Zucchini


Our kind neighbor supplies us with yummy zucchini all season...he doesn't like it, so we get a LOT! There's only so much zucchini bread you can make, so here is a recipe that is so, so, yummy you can hardly tell you're being healthy.

Stuffed Zucchini

1 big old zucchini
1 pound hamburger
1 onion chopped
1 can diced tomatoes (regular or the kind with italian seasoning)
2 cups cottage cheese
1-2 cups mozzarella cheese
1 egg
Italian seasoning

Preheat oven to 350 degrees. Brown the hamburger with the onion. In a seperate dish, combine the cottage cheese, mozzarella, egg, and italian seasoning (unless you're using the seasoned tomatoes...) Slice the zucchini long-ways into three slices and scoop out most of the seeds. This isn't "stuffed" zucchini as much as it is just a yummy zucchini dish. Anyway, layer the three long slices of zucchini into the bottom of a casserole dish. The thinner slices cook better rather then the traditional half-zucchini "boats". Top with the hamburger mixture. Top that with the can of tomatoes. Top that with the cottage cheese mixture. If you're feeling a little crazy, you can top it all with some more mozzarella.
Bake uncovered for 20-25 minutes and enjoy the yumminess. Gluten-free, carb-free, and very, very tasty!!
