Snickers salad


Becky brought this salad on Easter. Delish.
You can use green apples cut up, snickers bars, and cool whip
  or
any fruit you have on hand or  especially like.
I have seen recipes using vanilla pudding along with cool whip if you so desire.
Easy peasy and yummy.

Alison Scott Raspberry salad


1 large vanilla yogurt
1 pkg instant vanilla pudding
2 bags of frozen raspberries
1 carton of cool whip
Mix all together.

Leslie's Any-Fruit Fruit Salad

This is an awesome dish to serve as a snack,
a side dish, or even as a dessert.
The awesome thing about it is-
you can use ANY fruit you want.
-
This salad has a secret ingredient,
and it works wonders with any combination of any
type(s) of fruit.
-
So you can use your very favorite fruits,
or you can go for the colors you want,
or for what's in season or on sale,
or just whatever you have in your fruit basket.

DIRECTIONS:
Simply cut and mix up any kind of fruits you want.
My faves include melons, berries, bananas, etc.
If you want it to look nice, be careful not to smash
the berries as you mix.
The secret ingredient is: Pina colada mix.
Our favorite is the frozen Bacardi pina colada mix,
located in the frozen juice section of the store.
But if you can't find that one, just use a bottled
pina colada mix from the soda section.
Add enough to give a nice, sweet, pina colada flavor.
YUM!

Sue's favorite apple salad

2-3 apples
1/2 c. celery
Cashew, or pecans
1/2 c. chopped dates
squeeze juice from 1/2 orange
1/2 c. sour cream
2 TB LS. cool whip or whipped cream
1 TBL. Mayo
 
Mix altogether and enjoy.
Yummy and good for you.

Macaroni salad for the 4th of July

For our big 4th of July celebration I tried a new recipe.
Macaroni salad. I am not generally a fan,
 but I loved this so much as well as my fam,
 that it will become a new family favorite for gatherings.
(Ask Liz, Marci, Justin, Jake, Christian and McKay)
YES..........its a pioneer woman recipe.
 Give credit where its due.
The only thing I changed was I added more dressing,
 and I used sweet and spicey pickles
from famous Daves!!!!! Yummo







  •  
  • 4 cups Elbow Macaroni
  • 3 whole Roasted Red Peppers, Chopped (more To Taste, Can Also Use Pimentos)
  • 1/2 cup Black Olives, Chopped Fine
  • 6 whole Sweet/spicy Pickle Slices, Diced (about 1/2 Cup Diced)
  • 3 whole Green Onions, Sliced (white And Dark Green Parts)
  • 1/2 cup Mayonnaise
  • 1 Tablespoon Red Wine Or Distilled Vinegar
  • 3 teaspoons Sugar, More Or Less To Taste
  • 1/4 teaspoon Salt, More To Taste
  • Plenty Of Black Pepper
  • 1/4 cup Milk (more If Needed)
  • Splash Of Pickle Juice (spicy Sweet Pickles)
  • Extra Pickle Juice To Taste

Preparation Instructions

Cook the macaroni in lightly salted water according to package directions. Drain and rinse under cold water to cool. Set aside.
Mix together mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in pickle juice for extra flavor. Taste and adjust seasonings as needed. Set aside.
Place cooled macaroni in a large bowl and pour 3/4 of the dressing. Toss and add more dressing if you'd like. (Dressing will seem a little thin, but it will thicken up as salad chills.)
Stir in olives, roasted red peppers (or pimentos), pickles, and green onions. Add more of any ingredient if you'd like more stuff going on! At the end, splash in a little more pickle juice and stir.
Chill for at least 2 hours before serving. Sprinkle with sliced green onion to serve!

Mexican quinoa

1 c. water
1/2 c. quinoa
bring water to boil, simmer until water is gone.
cool.
ADD:
1 15. oz can of black beans
1 15 oz. can or corn drained
1 c. Roasted Tomatoes
1/4 c. purple onion diced
2 TBLS. cilantro
2 jalapenos-diced (or less if you don't like spicey)
juice of 2 limes
1 TBLS. olive oil
Salt to taste.


Spinach Salad

Sunday we tried a new salad.
Spinach, strawberries, mandarin oranges and red onion.
It is low calorie and delicious.

1 C. Strawberries
1 orange seeded and cubed or 1/2 can mandarin oranges.
4 C. Spinach leaves
cut up sliced red onion (if desired)

Cider vinaigrette
1/4 c. cider or apple juice
1/4 c. cider vinegar
1/4 c. olive oil
1 tsp. seasoned salt
1-2 TBls. honey or maple syrup or cider syrup
serves 2

Next time you need a salad...

Holy Awesomeness, Batman.
This is such a delish salad.
It's kind of a cross between my mom's broccoli-bacon
salad and the infamous "Fart Salad" haha...
Perfect as a side, for an event, or just to much on through the week!
-
**PS- This salad, in my opinion, tastes better if the flavors have
had a chance to 'marry'... so I'd make it the night before and
let it sit in the fridge, if it's for an event or shower ;)

Bowtie Broccoli Pasta Salad
-
INGREDIENTS
-
~ 16 oz. bow tie (farfalle) pasta noodles
~ 3 c. fresh broccoli (cut into small pieces)
~ 3 c. seedless red grapes (halved)
~ 2 c. mayonnaise
~ 2/3 c. sugar
~ 2/3 c. diced red onion
~ 2/3 c. red wine vinegar
~ 2 tsp. salt
~ 3/4 c. bacon bits (cooked or from a jar)
~ 1 1/3 c. chopped pecans, toasted (*Optional)

DIRECTIONS
-----
1.
Cook pasta according to package directions.

If not already done, cut broccoli from stem and into
small pieces. Cut all grapes in half.
-
3.
In a large bowl, whisk together may, sugar, onion,
vinegar and salt til thoroughly mixed. Add broccoli,
grapes, and drained cooked pasta. Stir to coat.
-
4.
*Depending on whether you want the bacon crunchy or
moist, you may add those now, or not til you're ready to eat.
Chill the salad for a few hours, or overnight.
Add the pecans (and bacon, if not already in) before eating.

Mexican Quinoa

Since Quinoa is a staple at our house now, I'm always looking for new recipes.
I made this today and liked it. It can be a dip, salad or a side dish.
*
Mexican Quinoa
1 c. water
1/2 c. Quinoa
Bring water to boil
simmer 20 min. until water is gone.
cool
*
add:
1-15oz can of black beans drained
1-15oz can of whole corn drained
1 c. canned roasted tomatoes
1/4 c. purple onion- diced
2 TBLS. cilantro
1-2 jalapenos with or without seeds depending on how hot you want it
juice of 1-2 limes
1-2 TBLS. olive oil
salt to taste
GOOD!!!!!!!!!

Strawberry or Raspberry Pretzel salad

Liz brought this salad for Thanksgiving..
So darn good..
(she did the raspberry version)


Pretzel salad
• 2 cups crushed pretzels
• 3/4 cup melted butter
• 3 tablespoons sugar, plus 3/4 cup sugar
• 1 (8-ounce) package cream cheese
• 1 (8-ounce) container whipped topping
• 2 (3-ounce) packages strawberry or raspberry gelatin dessert mix
• 2 cups boiling water
• 2 (10-ounce) packages frozen strawberries or raspberries
• Whipped topping or whipped cream, to garnish
Directions
Preheat oven to 400 degrees F.
For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9 by 13-inch pan and bake for 7 minutes. Set aside and allow to cool.
In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.
In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries,  and pour over the cream cheese mixture. Refrigerate until serving time.
To serve, cut slices and serve with a dollop of whipped topping.

Apple slaw..

I'm a slaw girl. But most recipes are fattening.
 I know that isn't a problem for me, (ya right) but some members
of the family are having to eat healthier choices...
blah, blah,, blah...
So here is an alternative that
I made while we were watching the BYU game.
 (yes we won)


Fuji Apple Slaw..
1 head Napa cabbage shredded
 (I used just plain ole green cabbage)
1/2 red onion julienne (tiny skinny slices)
2 fuji apples julienne (I used gala apples)
1 1/2 tsp. celery seed ( I did have this on hand)

1 TBLS. dijon mustard
1/4 c. cider vinegar
1 lrg. shallot (love these)
3/4 c. extra virgin olive oil
1 tsp. honey

mince shallot and place in a bowl with vinegar, honey, mustard, and salt
chop the rest of the veggies
Slowly wisk in olive oil to the shallots, vinegar, and mustard to emusify. (blend)
dress the cabbage and apples with the vinaigrette, then add the celery seed. Allow
to marry in fridge for at least 30 min.

Colin had 3 large helpings. Mark loved this.
Definitely a thumbs up!

In memory of Ruth's----- chicken pasta salad....


14 chicken breasts cooked and chopped
2 green peppers chopped
4 carrots chopped
4 small celery chopped
1 white onion chopped
8 c. mayo
48 oz. shell macaroni cooked and drained
s and p to taste
combine and chill

Ruth was a dear friend and my sisters mother in law. She was always making food to help
out with every gathering. She was known for bringing this salad to every party. We love you
Ruth. Thanks for the fun you brought to every party.

Cafe Rio at home

This is actually three recipes for the price of one!! With all these yummy recipes, you can recreate your own Cafe Rio pork salad...perfect for a Sunday when you can just throw it in the crockpot and let it cook all day.

Pork Barbacoa:
4 lb. pork roast
2 cans tomato sauce
2 tsp. garlic
1 cup brown sugar
1 can of coke or dr. pepper
2 tsp. cumin
2 tsp. molasses
salt and pepper to taste
Put pork roast in crock pot, combine all other ingredients and pour over roast. Cook on low for 7-8 hours. Shred pork and YUM!

Lime Rice:
2 Tbsp. butter
1 1/4 cup uncooked rice
2 1/4 cup chicken broth
3/4 tsp. salt
pepper to taste
1 lime, juice and zest
2 tbsp. cilantro
1/2 tsp. cumin
Combine ingredients and cook rice as usual. (I used my rice cooker and just put it all in, minus the butter. I added a little extra lime after it was done cooking.)

Tomatillo dressing:
8 oz. green salsa
1 1/2 tbsp. dry ranch dressing mix
1/4 cup sour cream
1/4 cup mayo
1/2 cup cilantro
1/2 tsp. garlic
1/4 tsp. cayenne
1/4 tsp. salt
2 tsp. lime juice
1/4 tsp. cumin
1/4 cup sugar
Blend all ingredients and let sit in the fridge for a few hours.

To make my salad, I put a tortilla on a skillet and melted some cheese on it. I warmed up a can of black beans, and put those as the first layer. Then the rice. Then some salad. Then the pork. Then a little cheese and sour cream. Add the dressing and your Cafe Rio taste-alike is complete. So good!

Quinoa Salad anyone???.....










Every once in a while you come across a dish that is healthy, delicious, and satisfying...

That would be Quinoa (pronounced keen-wa)

It's a grain that is called the perfect protein..no gluten is in it either


prepare quinoa using directions on pkg.
1c. of grain per 2 cups liquid (I sometimes use chicken broth to enhance flavor)

cook approx. 10-12 min

add cut up red and green peppers, cucumbers, carrots, red onion, or green onion, add a can of

black beans drained and corn drained if you would like.

Then drizzle olive oil and balsamic vinegar over the top and stir. salt and pepper to taste. It keeps for days...When I get it out of the fridge I drizzle a little more oil and vinegar on it.

yummy Christmas salad from Marci..


1 head iceberg lettuce


1 head Romain lettuce


1 red onion chopped


1 apple cut up


1 grapefruit cut up


1 orange cut up


1 pomegranate


dressing:


3/4 c. sugar


1/2 tbsp. dry mustard


1/3 c. red wine vinegar


1 tbsp. salt


1 1/2 tbsp. chopped red onion


1 c. olive oil


11/2 tbsp poppy seeds



combine ingredients. Top with dressing just before serving....


This makes a lot. so you can serve 1/2 of the salad at a time.




Marci's kitchen

Aloha Chicken (Zupas knock off)


aloha chicken salad with pina colada dressing

3 romaine lettuce hearts, chopped
2 large cans mandarin oranges, drained
1 large can pineapple tidbits, drained
1 red onion, diced
1 1/2 cups tortilla strips
3/4 cup crumbled feta cheese
3-4 chicken breasts, cooked, cooled & cubed
toasted coconut, optional

Toss all of the ingredients together in a large bowl or layer on a platter. Serve with Pina Colada Vinaigrette dressing.

PINA COLADA VINAIGRETTE

1/2 cup plus 2 TBSP sugar
1/3 cup mr. & mrs. T's pina colada drink mix
1/3 cup rice or apple cider vinegar- rice will make it more mild or
apple cider will make it stronger tasting
1/2 tsp. ginger powder
1 tsp. dry mustard
1/2 tsp. salt
1 1/4 cup vegetable oil

In a blender combine all ingredients except the oil. Blend well until light & frothy. With the blender still on, slowly add oil in a steady stream. Keep blending until the dressing is emulsified & thickened.

Easy Chicken Salad

Sue's chicken salad:
I Used the leftover chicken from my rotissorie chicken (or any left over chicken)
couple of palms of craisins
1/2 can mandarin oranges
cut up celery
red onion (just a little)
pine nuts ( but cashews, almonds, or any nut will do)
enough mayo to moisten
s&p to taste


Serve alone or with bread to make a sandwich...(potato chips and cream cheese brownies optional)*****I love rotissorie chicken, but usually throw it out before we eat it all..With this recipe, that doesn't need to happen..

Also you could use any fruit..Left over grapes or apples..By now you get the idea, right???

Summer Corn Salad

It's super-simple, but soooooo delish.
-
INGREDIENTS:
4 fresh ears of corn on the cob (I've subbed 1-2 cans of corn)
3-5 medium tomatoes, diced
1 cup bleu cheese crumbles (Feta may used instead)
1 handful fresh chives, chopped
Salt & Pepper
-
DIRECTIONS:
-Cut kernels directly off cob and place in medium bowl
(unless you're using canned like me- then just dump in bowl!)
-Add tomatoes, cheese, herbs, and salt and pepper to taste.
-Eat with a giant serving spoon ;)
-
*Tiffany's Hint: You can mix this up a zillion ways-
you can use different cheeses and different herbs...
whatever will taste good to ya!  It's easy, fast and AWESOME!!
